Kettle cooked in small batches with the finest organic sugar we could find. Popular in Trinidad and Tobago, burnt sugar is a classic ingredient that provides a sweet and rich character.  It is used for beverages, desserts and it is even used in savory dishes.

The slight charred flavor builds layers of flavor onto whiskey and bourbon.

Taking sugar past the caramelization stage is a great way to add depth and bittersweet complexity to your cocktails. We suggest using burnt sugar syrup when mixing with aged spirits, and it can also add an exciting foil to tropical or sour cocktails.

CHEF SUGGESTION

Burnt sugar can be used in dishes that require sweet character and can also be used in place of browning.
