Spicy Apple Ice Ball with Reposado Tequila

Tequila is that sort of drink that really should be in a category of its own, the smokey agave and bite are quite unique to this spirit.  We have written about tequila's ability to turn you on or off, depending on your experience (and of course the quality of tequila). This recipe, while fairly simple, opens the flavor of tequila in a whole new way.

Tools:
Electric Juicer (preferably a low RPM "cold juicer", but a high-speed juicer will work too), fine mesh strainer, double old-fashioned glass, Whiskey Ice Co Spherical Ice Ball Maker, ½ oz – 1 ½ oz. Professional Stainless Jigger

Ingredients:
2 to 3 ounces Reposado tequila
1 spicy apple ice ball (recipe below)

To make Spicy Apple ice ball:

  1. Start with the juice of a tart apple, Granny Smith apples work well, juice approximately 4-5 large Granny Smith apples or enough to yield about 6-8 ounces of juice.  (Alternatively, you can use 8 ounces of cold pressed 100% apple juice and add half an ounce of lemon juice for tartness) 
  2. Next, add about 1/3 to 1/2 of a fresh jalapeno to the juicer and add that juice to the the fresh apple juice. You should have somewhere close to  10 ounces of juice. 
  3. Filter the juice with the fine mesh strainer and fill your ice plug mold with the juice and add fresh water to the top of the logo on the side.  Stir the juice mixture to combine all ingredients. Freeze until solid (Note: depending on how filtered your juice mixture is, you may need to stir the juice mixture after about 2 hours in the freezer to prevent separation).
  4. Once frozen, form an ice ball using your Whiskey Ice Co.® Spherical Ice Ball Maker

Assembly:
In a large double old-fashioned glass, add the Spicy Apple Ice Ball and 2 to 3 ounces of Reposado Tequila.

As the Spicy Apple Ice Ball slowly releases the tart apple and jalapeno juices, your tequila will evolve with more and more flavors (and heat!).
